1. Bring my big ol' camera and lenses-
~ I will have to lug it around during a lot of walking
~ It will take up a lot of space in my backpack
~ I am probably not taking any shots that I am going to blow up or frame-
BUT...
~The things I see and do will be a once in a lifetime experience and will be absolutely amazing to capture with a nicer camera
2. Bring my small point and shoot-
~It will be easy to access
~I will probably take more pictures
BUT...
~I will miss some breath-taking once in a lifetime pictures that can't really be taken with this camera

Definately take your big camera. Like you said once in a life time!!
I say small... but that is only because I would not want to have to worry about/lug the other one around all over china... but I am not a photographer either! :)
I would say small. I've been there and although there are amazing sites to see, great pictures can still be taken with a small digital one. Plus, you will take more. You will do a ton of walking so lugging around a huge camera is not my idea of fun! I am not a photographer but we still have tons of photos that are so fun to look at. Do you really think you will blow some up and hang in house?
I would say small. You might get a few awesome shots with your monster, but you'll get tons of nice shots with your digital. I say quantity not quality. The lugging would discourage me for sure.
I say small it will take good enough pictures so that years later it will at least bring back the memory of what you saw, and thats really all you will want, unless you do want to frame them. But thats just my opinion
This is always the dilemma that I have when I'm going to travel. I go back & forth about it until it's time to go and I usually end up bringing both. I'm sure you'd get a lot of good pictures with your point & shoot, but if you're like me, you'd always wonder what pictures you could have gotten with the other camera and the whole time you're there, you'll wish you had it. It might be a pain to travel with, but I think you'd regret not taking it more than you'd regret taking it. That said, I'm sure either way would be good. I'm not one little bit of help am I. :)
I say big camera. Just like you said it's once in a lifetime! And I know you take breath-taking pictures. Go for it. And thank you so much again for driving me home. You did my mom and me a tremendous favor. Thank you thank you thank you!!
That Chinese red looks so awesome on the boy. I need a couple of 8 x 10's for my classes!! I am so excited. I say small. You can't imagine how it is on the fast train and having to drag a suitcase on wheels and have a purse and etc--
